Sturgeon
Sturgeon meat has been
considered one of the most tasty fish for a lot longer than its
reknowned caviar. Most of the countries which have a tradition
of preparing caviar, also enjoy sturgeon meat.
The most commonly available
form, for those who have no access to fresh sturgeon, is smoked
sturgeon. Virtually all the sturgeon species which produce caviar
are also considered valuable for their meat. In fact the small
river sturgeon known as the Sterlet is prized for its flesh more
than its eggs.
