Kippers-
smoked herring
These
fabulously flavoursome herring have been smoked, usually using
oak. They are opened up double fillets, which need a few minutes
of cooking.
They
are normally supplied as the entire fish, with their head still
on- grilling is very popular. However some are packaged as neat
and trimmed fillets vacuum packed ready for boiling in the bag.
