Herring- the seafood
Herring is undoubtedly
one of the most important fish in the northern oceans and has
been embraced into most cuisines in a wide range of herring products.
At the simplest level, it is enjoyed fresh by those maritime cultures
lucky enough to have access to the summer shoals. As often happens
when folk have to make the most of seasonal bonanzas, it is enjoyed
fresh when abundant, but a large portion of the catch is preserved
either for times of greater need or as an export commodity.
