This section of the Caviar
Guide will review of all the 14 sturgeon species/hybrids presently valued by the caviar
trade.
Resources include a simple
caviar glossary which covers most of the commonly used
caviar terms and a full list of sturgeon
species which are presently being harvested to produce caviar. Whilst the emphasis is on
sturgeon caviars, a few non-sturgeon roes which are prepared in a similar caviar style are
included.
The Sturgeon farming section introduces the
ecologically sustainable caviars that are now becoming available.
Descriptions of the most
widely available caviar types can be found below- the remainder of the sturgeon caviar
varieties will follow soon.
